Sweet OR Savory Chicken Salad-Two Ways!

Our followers ask, and we answer! You would love a chicken salad recipe you say? Well here is my take on two of my favorites! Chicken salad two ways- sweet and savory! Try my chicken salad with apples, celery, and grapes OR my buffalo chicken salad! Both are a delicious, healthy lunch or snack! Make it for a party, make it for your lunch, or take it to go!

Ingredients: 6-8 servings, each salad

Chicken Salad with Celery, Apples, and Grapes:

  • 1 ½ cups (or about 8 oz. or a half pound) shredded chicken*
  • ½ c. celery, chopped (about 2 stalks)
  • 1 c. apple, chopped ( about half a large apple)
  • 1 tsp lemon juice
  • ¾ c. grapes, halved
  • 2 TBS mayo (regular, vegenaise, etc)
  • 3 TBS plain Greek yogurt

Buffalo Chicken Salad:

  • 1 ½ cups (or about 8 oz. or a half pound) shredded chicken*
  • ½ c. celery, chopped (about 2 stalks)
  • ½ c. carrot, shredded (about 1 whole carrot)
  • ½ tsp garlic powder
  • ½ tsp Worcestershire sauce (low sodium)
  • 1/3 c. blue cheese, crumbled (or substitute feta, if you do not like blue cheese)
  • 2 TBS mayo (regular, vegenaise, etc)
  • 3 TBS plain Greek yogurt
  • 1/3 c. Franks hot sauce

Serving Suggestions:

  • Whole wheat crackers
  • Belgian endive
  •  IMG_3195
  • Celery sticks
  • Bread

Steps:

  1. For the sweeter salad; chop/prepare all ingredients. Toss the chopped apples with lemon juice. In a bowl, mix all ingredients together. Serve on whole wheat crackers, endive, bread, or use as a dip for celery. I personally love this one with endive.
  1. For Buffalo salad; prepare all ingredients. In a bowl, mix all ingredients together. Serve on whole wheat crackers, endive, bread, or use as a dip for celery. I really like this one with crackers.

 

*You can make your own, or take some help from the store and buy a rotisserie chicken and just shred it up yourself. Try to make your own, if you can, so that you an control the sodium.

  1. Both such great recipes. Made them both for a get together that I held at my house. Made it the night before and took some major will power for my boyfriend and I not to eat it all ourselves.
