Turkey Taco Lettuce Wraps

This has to be one of my (and the hubby’s) favorite types of lettuce wraps just for the simple fact that it tastes like the taco we all know and love, without the added carbs! We could probably eat it for breakfast, lunch and dinner, and not feel gross afterwards. It’s so easy to put together and can be customized how you like, or with whatever is left in the fridge. Cheesy Taco Burger

Ever wonder what you can do with extra taco meat? This isn’t an exact recipe, but it’s a wonderful method for using extra taco meat in another reimagined meal. It’s still fairly light and very tasty, even your kids will love it! Sort of a mix between a burger and a sloppy Joe, but better. Plus, there is room to make it your own. Blackened Grilled Fish Tacos with Cilantro Lime Crema

Time to get back into healthy eating! It’s gone back to being pretty hot here in So Cal, so I’ve been thinking back to the good ol’ summer days and cooking up some fresh and light meals. Oh believe me, I’m anxious for the Fall and sharing more cozy  meals, but whew we need some more rain and overcast days around here! Mexican-Style Breakfast Casserole

We go camping A-LOT! We are gone a minimum of once a month! We typically camp with a lot of friends and family. I am constantly trying to come up with healthy, easy, and most importantly, delicious breakfasts and dinners! I found this recipe and modified it to my liking. I think this will be a HUGE hit with my camping peeps. I meal prepped this casserole so I can eat it all week long. I loved it just as much the next days of eating it! After all, it is a casserole…they’re usually as good IF NOT BETTER the next day! I topped my serving with my FAVORITE SALSA IN THE WHOLE WORLD! If you get a chance, check her out on Instagram @originalsalsame. Trust me, you will thank me later! Feel free to use any corn tortillas you prefer. I found yellow corn tortillas that were 25 calories per 1 tortilla!!! I usually enjoy lettuce wrapped tacos, but happy to have found the low cal tortillas! Enjoy my loves!

Fit-For-You Quesadillas

I don’t think to make quesadillas often. But why not? They’re delicious, quick, satisfying, easy, and can be made healthy*. Note to self…make more quesadillas!

Loaded with veggies, lean chicken, and made with healthy tortillas, these really are fit-for-you!  And with the temperature being over 100 today, I didn’t want to cook inside. So once again, I used my grill. It was as easy as making quesadillas on the stove. So I encourage you all to use your outdoor grill more, especially when it’s super hot outside!

Garlic Lime Shrimp-Stuffed Avocado

My hubby and I love shrimp tacos but sometimes we want a low-carb option. I created this recipe so that we can enjoy the rich, fresh flavors of shrimp tacos without the tortilla. They are so yummy! They are also a great recipe for the spring and summer seasons, light yet very tasty, especially with the creamy avocado scooped up with each bite!
