Zucchini Enchiladas

It’s been a while since I have had time to blog. School is taking a toll on the family this year (myself and the kids alike)! I came home pooped yesterday. I sat down to fill out some form’s for school for the kiddos and got extremely tired (I should not have sat down so soon…lol). The family started to ask what was for dinner and I told them I’m too tired. But then I remembered about this recipe! I already had all of the ingredients at home, minus the chicken. I ran to the store real quick and purchased a rotisserie chicken (since I was out of shredded chicken in my freezer), brought it home, and had my hubby shred it for me while I started the rest. It came together in no time. I AM LOVING these enchiladas! The hubby and I each ate 3 that night, then I packed us 2 lunches each for this week (containing 2 enchiladas each lunch). This recipe makes 14 enchiladas. I felt so good about eating them. I did NOT miss the tortillas one bit! You HAVE to try this recipe. I am going to make this again, using a modified version of my Chicken Enchilada Suiza Casserole recipe.

Chicken Kiev Meatballs

I don’t know where to start! I grew up eating Chicken Kiev. I LOVE it! We didn’t have it all the time, as it was considered one of those “fancy dinners”. And what’s not to love about chicken, garlic, butter, and parsley?!?! I hadn’t thought about it in years…until…I had a dream  that I made little meatballs out of them which got me on the Rachael Ray show! It was the best dream, EVER! Of course, I woke up and realized it was only a dream…however, that didn’t stop me from trying to come up with a recipe and make them! I am so, so proud of this one! Totally took me back to my childhood. I called my mom to tell her. Understandably so, she wants me to make them for her. I cannot wait for her and YOU ALL to try these too!

Mini Meatloaves Nestled in Zucchini Noodles and Tomato Sauce

Nothing says comfort food more than meatloaf! However,  just hearing the words comfort food makes me think of gut-busting food. But not this meal. I’ve lightened it up by making mini meatloaves rather than one giant one. And I nestled them in zucchini noodles and tomato sauce, rather than regular noodles. Protein and veggies makes this a healthy meal!  Enjoy!

Simple Tomato Mozzarella Chicken

It’s too hot to cook on the stove top or turn the oven on for long periods of time. So I’ve been using my BBQ as an outdoor oven these days. This yummy recipe is so simple and only has 4 ingredients!  My kiddos love it and it’s safe to eat for my hubby who has kidney disease. My daddy also came over for dinner last night, so I knew I had to make it diabetes-friendly too!

Tuna Tartare

I had planned to make a fun dinner for my family with a tuna tartare “appetizer”. However the tuna was so filling, I saved the rest of the dinner for the next night! I fried up some wontons to go along with it and we had ourselves a meal!

This meal was perfect for my husband who has kidney disease and could even satisfy my daddy who has diabetes. I read that the American Diabetes Association and the American Heart Association recommend that you should include fish in your meal plan two or three times a week. So this recipe rocks!
