Roasted Cabbage with a Garlicy-Dijon Sauce

Cabbage is an underrated vegetable. It’s high in vitamin K, vitamin C and fiber. It’s also a good source of vitamin B6 and folic acid. And since it’s low in potassium, it’s great for the hubbies kidney disease. It’s so easy to make, comes together in under 30 minutes, and it super yummy! Cheers to healthy kidneys!

Ingredients (4 servings)

For the cabbage:

half cabbage cut into 4 wedges

olive oil

garlic powder

salt and pepper (omit salt if you have ckd)

For the sauce:

4 TBS butter

2 TBS olive oil

1/4 cup finely chopped or grated onion

1 tsp chopped or grated garlic

1 rounded TBS dijon mustard

salt and pepper (omit salt if you have ckd)

Instructions:

1. Heat the oven to 450° and line a sheet pan with parchment paper.

2. Rub both sides of the wedges with olive oil. Sprinkle with salt, pepper, and garlic powder. Omit salt if you have CKD.

3. Roast in the oven for 10 minutes, then flip cabbage wedges over and roast for another 10 minutes.

4. Meanwhile, make the sauce. Add the butter and olive oil to a small saucepan and melt. Add the onions and garlic on a low setting and cook until nice and soft. Add Dijon, mustard and salt and pepper to taste. Add a splash of chicken stock to thin it out. Or vegetable stock if you want this to be a vegetarian dish.

5. Pour sauce over cabbage wedges and enjoy!
