Cheesy Taco Burger

Ever wonder what you can do with extra taco meat? This isn’t an exact recipe, but it’s a wonderful method for using extra taco meat in another reimagined meal. It’s still fairly light and very tasty, even your kids will love it! Sort of a mix between a burger and a sloppy Joe, but better. Plus, there is room to make it your own. Try it soon with your family!

Chicken Suizas Soup with Quesadillas

I don’t know about you, but I LOVE enchilada suizas! Enchilada Suizas are basically “Swiss-style” enchiladas, meaning it’s a bit creamier than your typical enchilada (not to mention the added Swiss cheese)! You can find my favorite recipe here. Well one of my favorite people of all time (Rachael Ray), made it into a soup! Here is the original recipe. I modified it to make it a little healthier for my family (my kids LOVED it). I cannot tell you how happy this meal made me! SOOOOOO satisfying! Please, please make this since it’s still so cold out! Your tummy will thank you! And so will I! Comment, take pics, and let us know how it goes! ❤

Thai Basil Chicken with Cashews

I was also inspired by our good friend Crystal’s “Haters Not Allowed” healthy lifestyle Facebook group for this wonderful recipe. Skinnytaste.com is one of our favorite go-to sources for healthy recipes, so when I read that Crystal tried their Thai Basil Chicken and loved it I just had to try it myself. We both added some yummies to it to enhance it even more while still keeping it light. It’s wholesome enough with the added veggies and cashews that you won’t even feel like you need rice. Cheers to a fresh 2017!

I belong to a private group on Facebook that is comprised of women who are there to encourage each other through health, fitness, and food. My sister-in-law posted this recipe from Skinnytaste. I had all the ingredients on hand, so I thought I’d give it a try. I was NOT disappointed! I was super simple to make and tastes delicious! You will not be disappointed. Thank you Skinnytaste!

Hot Philly Cheesesteak Dip

I’m a sucker for sandwiches-healthy or not. And I’m a sucker for dips! I know we’re all trying to be a little healthier with the start of the new year, but I couldn’t help this one. It combines two of some of my favorite things-sandwiches and dip. When you have some people over, make this hot appetizer (especially in the chilly weather). Your friends will thank you for it.
