It’s been awhile since I blogged but I’m excited to get back on to share one of my favorite grilled chicken recipes. Skinny Taste is one of my go-to sites and I absolutely love this one. The chicken is so flavorful and tender, and the garlic yogurt gives it a rich acidic kick without the fat. Paired with grilled veggies, and boom it’s a complete low-carb meal! So easy and budget friendly too. It’s starting to warm up out there, so this would be the perfect backyard dish to whip up for a few folks or a group!

Healthy Chicken Crust Pizza

Happy National Pizza Day! What better way to celebrate than with a healthier riff on a classic! I made a margarita style pizza (adapted from Optavia), but you can switch up the ingredients! Next time I’m going to make a white sauce veggie pizza with roasted garlic, artichoke hearts, zucchini, mushrooms, and olives. Now you can eat pizza and feel good about it! Cheers!

I really just want to show you the method here, you can make it any way you want, depending on what you have in your fridge. As long as you have eggs you’re good! Baked Asparagus & Cheese Frittata

In these tough times, we all have a lot of free time at home and it’s a challenge trying to cook healthy while also searching for the ingredients you need at the store. If you’re lucky enough to find eggs (by the way, highly recommend Instacart, this is the only way I was able to snag eggs), try this low-carb recipe I found through Eating Well. I was pleasantly satisfied, soooooo tasty. And it can be enjoyed any time of day. The fluffy ricotta mixed with the eggs and veggie mixture makes for a luxurious texture and flavor!

Reuben Salad

This is the perfect salad for you Reuben sandwich fans out there! Thank you again for your 30-minute meals Rachael Ray! We all know rye bread is bomb but you won’t miss it in this recipe. The Russian dressing is so flavorful with the meat and cheese, my mouth is watering just talking about it. We replaced the sour cream with Greek yogurt and it still tastes luscious. It’s enjoyable as a side dish and substantial enough as a main meal!

Southern-Style Cauliflower “Potato” Salad

This is one of my favorite healthy “imposter” style sides, you can hardly tell Mr. Potato Head ditched the party! Instead of using potatoes loaded with carbs, this recipe uses nutritiously delicious cauliflower. Because cauliflower has a similar starchy consistency to potatoes, it’s taken over the past few years whether it’s through pizza crust, mashed potatoes, rice or sides like this! Plus it has an amazing taste and is a great canvas for other flavors. Serve this up at your next BBQ or gathering!

Turkey Taco Lettuce Wraps

This has to be one of my (and the hubby’s) favorite types of lettuce wraps just for the simple fact that it tastes like the taco we all know and love, without the added carbs! Easy Peasy Chicken Salad Lettuce Wraps

I am really enjoying Giada’s newest cookbook “Happy Cooking”! The recipes are just so clean, delicious and not too difficult. In this intense summer heat, I’m especially looking for refreshing, light dishes that don’t use the oven or stove. I came across her Easy Peasy Chicken Salad and my husband and I just loved it. It has great herby flavors from the fresh tarragon and chives, brightness from the lemon and crunch from the snap peas. Because I’m obsessed with the slight bite of brown mustard in creamy sauces, I just added a bit. I also used non-fat Green yogurt to make it even lighter. So yummy!

Warm Chicken Parmesan Salad

Just got home from a wonderful trip to Ireland and London with an amazing group of friends, and settling back into the daily routine. Though it’s hard to come back to reality, I am looking forward to jumping back on the healthy eating and exercise train. We ate (and drank) like Kings over there and luckily I maintained my weight, only because we walked about 8 miles a day haha. That won’t happen everyday at home, so I need to definitely get back into whippin’ up healthy recipes. Here’s a deliciously simple and light recipe I came across while watching Giada at Home! I tweaked it a bit to lighten even more.
