I am definitely a grazer when it comes to getting through the day, especially when I’m stressed from work! Because of this, I try my very best to fill my fridge and pantry with healthy snacks. It’s tough when I have that Hot Cheeto Fries craving though ahhh (which by the way aren’t super bad since you can have over 20 pieces a serving lol)…but back to healthiness haha…This is another favorite from Bobby Flay’s Fit cookbook. Edamame is delicious steamed/boiled with just a sprinkling of salt but this is a uniquely easy take on it, love it!

Slow-Roasted Cod with Avocado Salsa Verde and Pomegranate

I am beyond excited to jump back on the healthy eating and exercise bus of 2018! As we all know, the holidays just bustle with comforting, rich, heavy foods and it’s just tough to avoid it and keep that holiday cheer haha. The new year brings new goals, accomplishments and challenges. When I heard that Bobby Flay was releasing a healthy cookbook, I just jumped on my Amazon app stat! He is the king of bold flavors so I knew I couldn’t lose with his amazing recipes. This is the first recipe I’ve tried from Bobby Flay Fit and my husband and I were absolutely satisfied with the result. It’s definitely a different take on cod that I’ve never tried before, and the pomegranate seeds were a unique addition! They added a nice pop and slightly sweet contrast to the spice and acidity. Just made a few minor tweaks (used olive oil instead of canola and didn’t use salt to season the avocado salsa verde) but other than that perfecto! Not only is it fresh and delicious, but it’s so simple and quick to throw together. Buy this book ASAP!!!

Easy Peasy Chicken Salad Lettuce Wraps

I am really enjoying Giada’s newest cookbook “Happy Cooking”! The recipes are just so clean, delicious and not too difficult. In this intense summer heat, I’m especially looking for refreshing, light dishes that don’t use the oven or stove. I came across her Easy Peasy Chicken Salad and my husband and I just loved it. It has great herby flavors from the fresh tarragon and chives, brightness from the lemon and crunch from the snap peas. Because I’m obsessed with the slight bite of brown mustard in creamy sauces, I just added a bit. I also used non-fat Green yogurt to make it even lighter. So yummy!

Game day or just a summer gathering with friends-these are tasty little bites that will go quickly! My mama LOVES my artichoke dip. I had some phyllo cups in my freezer that I didn’t end up using for a party I had, so I decided to mash the 2 together! This recipe made 30 little, cutie cups and boy, were they gone quickly! French Onion Pork Chops

Here’s a really creative way to enjoy the flavors of French onion soup without the guilt! I’ve been brainstorming ways to reimagine my favorite eats into healthy main dishes and started “Pinteresting” “French onion soup dinner”. I was inspired by this genius recipe on kudoskitchenbyrenee.com and was so happy with the result. If you have some extra time to caramelize onions, you must try this! It takes awhile to really get that brown color and sweet flavor representative of the famous soup, but it’s worth it. Other than that, it just takes a few ingredients and steps. You will be so satisfied with the combination of flavors in this dish, so yummy!!!

Warm Chicken Parmesan Salad

Just got home from a wonderful trip to Ireland and London with an amazing group of friends, and settling back into the daily routine. Though it’s hard to come back to reality, I am looking forward to jumping back on the healthy eating and exercise train. We ate (and drank) like Kings over there and luckily I maintained my weight, only because we walked about 8 miles a day haha. That won’t happen everyday at home, so I need to definitely get back into whippin’ up healthy recipes. Zucchini Enchiladas

It’s been a while since I have had time to blog. School is taking a toll on the family this year (myself and the kids alike)! I came home pooped yesterday. I sat down to fill out some form’s for school for the kiddos and got extremely tired (I should not have sat down so soon…lol). The family started to ask what was for dinner and I told them I’m too tired. But then I remembered about this recipe! I already had all of the ingredients at home, minus the chicken. I ran to the store real quick and purchased a rotisserie chicken (since I was out of shredded chicken in my freezer), brought it home, and had my hubby shred it for me while I started the rest. It came together in no time. I AM LOVING these enchiladas! The hubby and I each ate 3 that night, then I packed us 2 lunches each for this week (containing 2 enchiladas each lunch). This recipe makes 14 enchiladas. I felt so good about eating them. I did NOT miss the tortillas one bit! You HAVE to try this recipe. I am going to make this again, using a modified version of my Chicken Enchilada Suiza Casserole recipe.

Corned Beef and Sweet Potato Hash

As soon as corned beef went on sale at our local grocery story, my hubby and I jumped on it and purchased one right away. We love slow cooking corned beef for St. Paddy’s day, but wanted to start even earlier this year to be able to make delicious meals out of the leftovers for the week. Our favorite method is going low and slow in the crockpot for 10 long hours, along with potatoes, carrots and cabbage, and drenching it in Bud Light instead of water, for a buttery rich flavor. So insane! We’ve tried it with Guinness as well, but love the flavors the Bud Light develops even more.

As far as leftover recipes, our favorites are grilled Reuben sandwiches and Corned Beef Hash. There’s not really much I can do to make a Reuben very healthy, so I opted for a healthy take on Corned Beef Hash by using wholesome sweet potatoes. It was absolutely delicious, and that touch of sweetness from the potatoes really complimented the corned beef. Top it off with a fried egg, and it’s the perfect breakfast!

Lemony White Bean & Arugula Chicken Salad

I don’t think of myself as someone who would order just a salad at a restaurant or look for salad recipes as meals, but once in awhile I come across some really amazing ones that just hit the spot. Giada’s lemony white bean and arugula salad is one of my favorites. It’s so bright and fresh, and with my addition of shredded rotisserie chicken breast, it made for a satisfying and substantial dinner. I’ve been traveling quite a lot for work and eating many wonderful dinners out with my co-workers, so I was excited to get back into my healthy eating! Just a few more months until the summer!
