Roasted Radishes with Sauteed Greens

I’ve been super excited about getting my organic vegetable box from Farm Fresh! This week’s selection included two bunches of radishes. So today we’re turning these humble vegetables into a delicious side dish with roasted radishes and sautéed greens. This recipe is a perfect blend of earthy flavors and vibrant colors, bringing the best of the garden straight to your table. Whether you’re a radish lover or new to this vibrant root veggie, this dish will surprise and delight!

Ingredients (4 servings)

2 bunches of radishes

Avocado or extra virgin olive oil cooking spray

Two cloves of garlic grated or chopped (or 1/2 tsp. of garlic powder)

Butter

Salt and pepper

Splash of chicken stock or broth

Squeeze of lemon (optional)

Instructions:

  1. Heat the oven to 500°.
  2. Wash and cut radishes and greens. Cut radishes in half length wise. Wash and reserve green tops.
  3. Spread radishes on a baking sheet, cut side down. Spray lightly with cooking spray. Sprinkle lightly with salt. Roast at 500° for 20 minutes.
  4. Right before you take radishes out of the oven, it’s time to sauté the greens. Add in a tiny pat of butter (about a half tablespoon) to a pan over medium heat. If you’re using fresh garlic, add that to the butter and cook for 1 minute. Add the greens, garlic powder (if using) salt and pepper, and a splash of chicken stock. Sauté for about 2 minutes until wilted.
  5. Layer the greens in a shallow dish and top with roasted radishes. If you would like, you can toss the radishes in a tiny bit of butter when they come out of the oven. Then add on top of the greens. You can squeeze a little bit of fresh lemon over the dish right before you serve.
