This is the perfect salad for you Reuben sandwich fans out there! Thank you again for your 30-minute meals Rachael Ray! We all know rye bread is bomb but you won’t miss it in this recipe. The Russian dressing is so flavorful with the meat and cheese, my mouth is watering just talking about it. We replaced the sour cream with Greek yogurt and it still tastes luscious. It’s enjoyable as a side dish and substantial enough as a main meal!
It’s so very hard to stay healthy during the holidays. However, I found a side dish recipe that inspired me! I modified it a bit, and I’m super happy with the results! If you feel the need to make a healthier side dish for your Christmas dinner, then make this! It hits all the same bells and whistles as a loaded baked potato, but much better for you! Tuna…center-cut ahi tuna…on sale again at Sprout’s! $5.99 a pound! This is when I make this salad (and my tuna tartare). Wish I can take credit for this one. Thank you Willow Arlen for this delicious meal! Growing up, I thought I hated tuna. But, oh, how I’ve changed my mind! There’s not much else to say, except that it’s delicious and I think ya’ll should try it! We all could probably use a little more tuna in our lives! 😉 Enjoy!
Hot summer days equals light, healthy meals! The hubby wanted buffalo wings, and I wanted something lighter, but something that would hit the same bells and whistles! When I told him I’d be making my buffalo chicken salad, he was very happy. He LOVES this salad! You can always buy your own blue cheese dressing, but I like to make my own dressings from scratch because you can control the quality and quantity of ingredients. My husband does NOT like blue cheese dressing; the moldy cheese, it freaks him out! However, he does love feta cheese. So I make his “blue cheese” dressing into a “feta cheese” dressing. I still prefer blue cheese, so I divide the base mix into 2 bowls-one for me with blue cheese, and one for him with feta cheese. Feel free to make your own! Or you can always go out a buy a bottle. They have great yogurt-based dressing in the produce section. Enjoy!

As usual, I was watching the Rachael Ray show and she made the most delicious Mediterranean dish-Farro Bowls! Farro is an “ancient grain” that kind of reminds me of barley. It’s mild in flavor and has a nice bite/chew to it. Farro is a healthy carbohydrate source for people-even if you have kidney disease or diabetes. I buy my farro at Trader Joes. If you love the flavors of Mediterranean dishes, you’ll love this! It has kalamata olives, feta cheese, tomatoes, lemon, and garlic just to name a few! Thank you Rachael Ray for this super fabulous dish!
I was watching the Rachael Ray show the other day. Every month she creates a “Burger of the Month” recipe for her magazine. Rachael asked a friend of hers what her favorite meal was growing up. Her friend told her that she liked when her mom made pepper steak. So Rachael created a pepper steak burger. You can check out that recipe here. But this made me think; what was one of my favorites growing up? I loved when my mom made chicken Cordon Bleu in the slow cooker. And so, the inspiration was created! Thank you mom for your delicious take on Chicken Cordon Bleu! And I’ve turned it into a burger! I even give you a choice of two different condiments to add: a creamy, garlicky mustard sauce, or a creamy honey mustard (inspired by Rachael Ray). Now everyone else can enjoy it too!

A few years back, I tried making “cauliflower pizza” that ended up falling apart in my hands (but it was delicious). Recently, a friend of mine started making cauliflower pizza, so I wanted to give it another go. I’ve been researching different methods to try and come up with one that I think will work. Since it’s summer and we love to have BBQ pizza parties at our house, I decided to try it on the grill! And here it is! I am proud of this one; it’s cooked outside, it’s extremely satisfying, and suuuuuper yummy! Enjoy!
The Fourth of July is coming up! A few weeks back, I had a BBQ for Memorial Day and made these two patriotic appetizers: 7-layer dip and a veggie tray. If you are having a BBQ or are invited to one, you may want to bring one or both of these snacks to celebrate our Independence Day! Cheers!

I belong to a private group on Facebook. The purpose of this group is to encourage each other and share ideas about living a healthy life style. We post and converse about many things, but my favorite thing is sharing ideas about food. One of my friends posted this original “Zucchini Carpaccio” recipe. It looked amazing; refreshing and simple with only 5 ingredients. I just happened to have all 5 ingredients on hand for lunch that day so I made it. Today was my first official day of summer break as a teacher! I now have the entire summer to focus on my favorite hobby. And that would be to cook…and eat! I looked in my kitchen to see what I can see. I saw bacon, lettuce, tomatoes, and avocado. But I didn’t want the bread, so I decided to make spring rolls with rice paper. When I went to the store, they didn’t have rice paper, but these soy papers. They worked equally as well! They came in different colors, so it was really fun for my kids to eat. If you are looking for a snack, then make one per person, but if you want it for lunch, make two per person. Enjoy!
