I was watching the Rachael Ray show the other day. Every month she creates a “Burger of the Month” recipe for her magazine. Rachael asked a friend of hers what her favorite meal was growing up. Her friend told her that she liked when her mom made pepper steak. So Rachael created a pepper steak burger. You can check out that recipe here. But this made me think; what was one of my favorites growing up? I loved when my mom made chicken Cordon Bleu in the slow cooker. And so, the inspiration was created! Thank you mom for your delicious take on Chicken Cordon Bleu! And I’ve turned it into a burger! I even give you a choice of two different condiments to add: a creamy, garlicky mustard sauce, or a creamy honey mustard (inspired by Rachael Ray). Now everyone else can enjoy it too!

Ingredients (4 servings)
- Olive oil
- 1 lb. ground chicken (breast meat or both thigh and breast meat)
- 3 TBS grated onion
- 2 tsp dijon mustard
- 2 tsp Worcestershire sauce
- 2 cloves of garlic, grated of finely chopped
- salt and pepper (or omit the salt of you have kidney disease)
- 4 or 8 slices of ham of choice (depending on the thickness; either 1 or 2 slices per burger)
- 4 slices of Swiss cheese
- 4 buns of choice
- lettuce (optional)
- tomato (optional)
Creamy Honey Mustard Sauce:
- 2 TBS mayo
- 2 TBS Dijon mustard
- 2 TBS honey
Creamy, Garlicky Mustard Sauce:
- 2 TBS mayo
- 2 TBS Dijon mustard
- 1 small clove grated, grated or finely chopped
Steps:
*You can turn this into a diabetes friendly meal by wrapping this burger in lettuce (instead of on a bun) like I did! Soooo delicious!
1. Preheat a cast iron skillet to medium/medium-high heat with a little olive oil.
2. In a bowl, combine chicken, onion, mustard, Worcestershire, garlic, salt, and pepper. Grate the onion right over the bowl so you can catch the onion “juice”. Form into 4 equal size patties and set aside.
3. Brown the slices of ham on each side on the skillet. Set aside on a plate covered with foil.
4. Cook chicken patties for 5 minutes on each side (until a meat thermometer reaches 165 degrees). After you flip the burgers over, wait about 2 minutes, then lay 1 or 2 slices of ham on each patty and top with Swiss cheese. You can loosely cover the skillet with foil to help melt the cheese).
5. While the patties are cooking, make the sauces. In a small bowl, mix the mayo, mustard, and garlic-set aside. In the other bowl, mix the mayo, mustard, and honey-set aside.
5. To assemble, slather whatever sauce you choose on both sides of the bun, lay the chicken patty with ham and cheese on the bottom, and top that with lettuce and tomato. I wrapped mine in lettuce with a tomato. My hubby just wanted his plain without lettuce or tomato (just the bun, patty, ham, and cheese). Enjoy!
