Shwarma-Spiced Grilled Chicken with Garlic Yogurt Sauce

It’s been awhile since I blogged but I’m excited to get back on to share one of my favorite grilled chicken recipes. Skinny Taste is one of my go-to sites and I absolutely love this one. The chicken is so flavorful and tender, and the garlic yogurt gives it a rich acidic kick without the fat. Paired with grilled veggies, and boom it’s a complete low-carb meal! So easy and budget friendly too. It’s starting to warm up out there, so this would be the perfect backyard dish to whip up for a few folks or a group!

Deviled Chicken Francese

It’s 2020 and time for some healthy eating after feasting during the holidays! Tammy and I agreed that this year our goal is to focus on recipes that aren’t only healthy and delicious, but quick and easy too.

Last weekend, we spent some time catching up on our favorite chef Rachael Ray, and her new 30 minute meals. It’s been a crazy year and we’ve been dying to cook together in her new kitchen. It was tough to choose as her recipes all made us drool, but we picked three lighter recipes we could prep and make ahead of time. The first was this Deviled Chicken Francese. Sounds fancy but it was easy!

The deviled part of the chicken recipe really caught our eye, especially with mustard and Calabrian chili’s involved. We used reduced-fat milk, unsalted butter, low-sodium broth, and skipped the bread to lighten it up. We just had it for dinner last night. It was so satisfying and tasty!

Easy Peasy Chicken Salad Lettuce Wraps

I am really enjoying Giada’s newest cookbook “Happy Cooking”! The recipes are just so clean, delicious and not too difficult. In this intense summer heat, I’m especially looking for refreshing, light dishes that don’t use the oven or stove. I came across her Easy Peasy Chicken Salad and my husband and I just loved it. It has great herby flavors from the fresh tarragon and chives, brightness from the lemon and crunch from the snap peas. Because I’m obsessed with the slight bite of brown mustard in creamy sauces, I just added a bit. I also used non-fat Green yogurt to make it even lighter. So yummy!

Warm Chicken Parmesan Salad

Just got home from a wonderful trip to Ireland and London with an amazing group of friends, and settling back into the daily routine. Though it’s hard to come back to reality, I am looking forward to jumping back on the healthy eating and exercise train. We ate (and drank) like Kings over there and luckily I maintained my weight, only because we walked about 8 miles a day haha. That won’t happen everyday at home, so I need to definitely get back into whippin’ up healthy recipes. Here’s a deliciously simple and light recipe I came across while watching Giada at Home! I tweaked it a bit to lighten even more.

Lemony White Bean & Arugula Chicken Salad

I don’t think of myself as someone who would order just a salad at a restaurant or look for salad recipes as meals, but once in awhile I come across some really amazing ones that just hit the spot. Giada’s lemony white bean and arugula salad is one of my favorites. It’s so bright and fresh, and with my addition of shredded rotisserie chicken breast, it made for a satisfying and substantial dinner. I’ve been traveling quite a lot for work and eating many wonderful dinners out with my co-workers, so I was excited to get back into my healthy eating! Just a few more months until the summer!

Thai Basil Chicken with Cashews

I was also inspired by our good friend Crystal’s “Haters Not Allowed” healthy lifestyle Facebook group for this wonderful recipe. Skinnytaste.com is one of our favorite go-to sources for healthy recipes, so when I read that Crystal tried their Thai Basil Chicken and loved it I just had to try it myself. We both added some yummies to it to enhance it even more while still keeping it light. It’s wholesome enough with the added veggies and cashews that you won’t even feel like you need rice. Cheers to a fresh 2017!

Crispy Baked Rosemary Dijon Chicken

The amazing flavors of rosemary and Dijon mustard are some of my favorites, and it doesn’t take much to make magic. Plus, they are natural, low-fat ingredients! I was inspired by Ina Garten’s roasted mustard chicken thighs while watching the Food Network. I saw that she had dredged her chicken in Dijon as the binder which I thought was genius! It not only keeps the bread crumbs on but adds great flavor underneath. I use skinless chicken breasts instead of thighs to keep it light. Baking the breasts keeps it super moist too.  It’s one of my husband’s favorite chicken recipes and he says he doesn’t miss the fried version at all, especially with the crispy Panko!
