Tuna salad-stuffed tomatoes were one of my favorite meals growing up. It was one of the few healthy meals I actually got really excited about when I saw it on my plate! This is my take on tuna salad…which is pretty similar to the ingredients I absolutely love in egg salad. The strong, yet bright flavors of Dijon, dill, lemon and capers really make this pop! And what’s great is you can keep this low-carb if you stuff it in a tomato like my mom did, or you can eat it on some wheat bread or crackers. Either way, you will love it!

This is my favorite egg salad recipe which I found on the Food Network website. It’s very easy and very flavorful. What really makes it pop is the mustard, lemon and dill, just a perfect combination with the creaminess of the, eggs, mayo and yogurt. I adjusted the recipe a bit to make it lighter and cut the sodium in half. Especially when paired with wheat bread or crackers, or veggies, you’ll be satisfied without the guilt!

These wholesome little patties pack in so much flavor using simple ingredients, and they are carb/gluten free! You can enjoy them as a light snack or lunch, or alongside a lean protein for a healthy meal. The delicious dill cream adds a bright contrast to the savory patties. This is one of my, and also my nephew Aidon’s favorite, healthy snacks. And it seriously only takes 5 minutes to make. I found this recipe on the Recipe Book and More blog and adjusted a bit to decrease the salt and increase the dill. Enjoy that slightly salty, tart flavor of salt and vinegar chips with the brightness of dill, without all the carbs. It’s also very refreshing on a hot summer day!

Tyler Florence’s potato salad is my favorite on earth, and has been my go-to side dish for many summer potlucks and BBQs. It has lots of flavors and textures, just perfect…an oldie but definitely a goodie! I modified it a bit to be lighter, and it’s still very creamy and flavorful. It’s pretty easy to make and can be prepared and refrigerated ahead of time…the flavors just get better!
