Chicken Piccata w/ Spaghetti Squash

The lemony, buttery flavor of chicken piccata is one of my favorite Italian dishes, especially served with delicate angel hair pasta, yum! But unfortunately, we can’t indulge in all those carbs and butter as often as we would like, so I lightened up the dish using a lot less butter, and served it with spaghetti squash instead of pasta. This healthy variation is absolutely satisfying and the spaghetti squash adds a slightly sweet flavor that compliments the other bright flavors really well. Now you won’t have to limit yourself to chicken piccata to only once a year! =P

Creamy Mashed Potatoes with Smoked White Cheddar and Mushroom Gravy

Mashed potatoes have to be one of my favorite comfort foods of the holiday, heck year round actually! They are just so luscious, creamy, and oh so satisfying. A recent trip to the Tillamook Cheese Factory in Oregon inspired me to make this recipe. We were in heaven! I brought home various cheeses including a Smoked Sharp White Cheddar that had been aged for 18 months. This past Thanksgiving I tried it in my mashed potatoes and the flavors went through the roof! I just had to order more for Christmas dinner! I serve it with a rich mushroom gravy with thyme and shallots, and it’s a winning combination!

Spicy Garlic Sesame Soba Noodles

As you can tell, I love all types of food, but I’d have to say Asian flavors have to be in my top 3. To me, you can’t go wrong. The flavors are so bold and flavorful. My mouth is watering just thinking about it. Plus, you can go so healthy and light with it using all sorts of vegetables, tofu, buckwheat noodles, etc… Oh tofu, that’s a different story for a different blog.
