Holiday Sausage & Herb Dressing (Stuffing)

I’ve never made stuffing/dressing from scratch before but wanted to try it out this past Thanksgiving. I came across this “Simple is Best” recipe from epicurious.com and knew from the reviews it would be a hit. Based on some reader comments, I added sausage for extra flavor and mixed in some Ciabatta for texture. I was so happy to hear that family and friends really enjoyed it, even those that do not usually like stuffing/dressing. You must try this for your Christmas dinner this week! This tastes best when you pre-make it the day before so plan ahead!

Oktoberfest Beer Cheese Dip

I love all things Oktoberfest! My birthday is in the beginning of October and so is Melanie’s. We usually try to kick off the October celebrations together by going to a local Oktoberfest…beer, sausage, and great company!  I was inspired by Melanie’s German Sausage and Barley Soup (Graupensuppe) and the Oktoberfest’s we ad been visiting, that I came up with this recipe. It has sausage, beer, and cheese-what’s not to like? And this would make a great party snack! It’s a cheat meal, but oh-so-worth-it!  Enjoy!

German Sausage and Barley Soup (Graupensuppe)

Fall is finally here woohooo! I am beyond excited for cozy soups, stews and casseroles. I’ve been researching for a delicious sausage recipe in honor of Oktoberfest, and came across this excellent soup on www.oliviascuisine.com. It’s a bit cooler in Southern Cali this week so I jumped on the opportunity! I just adjusted a bit by adding in kale for some extra vitamins and crumbled in the crispy bacon at the end. My family absolutely loved it…so tasty and hearty, yet still light. Enjoy this on a nice cozy night this Fall!

Portobello Mushroom Pizza w/ Italian Sausage, Tomatoes and Kale

Ok, who doesn’t have pizza as one of their tops favorite foods? It is #1 on my list! But oh how we wish we could have it multiple times a week without feeling guilty! This portobello “crust” allows you to enjoy your favorite pizza toppings…mmmm cheese and meat… without the carbs. These are some of my favorite low-fat toppings, but you can definitely make it your own. It’s also a fun recipe you can make with your kids while giving them a good dose of veggies!
