I’ve recently heard about cauliflower alfredo sauce. Sounds pretty temping, so I decided to try and create my own. And it turned out really yummy! Your typical alfredo sauce is made up of mostly butter, cream, and parmesan cheese, which is oh, so delicious. I definitely couldn’t hit the same bells and whistles without adding the cheese, but the rest of it is pretty darn healthy! I decided to make chicken alfredo with it. I made zucchini noodles for myself and the hubby, but used whole wheat fettuccini for the kiddos. So if you are looking for a low-carb option, I say go with the zucchini noodles!
Need a quick, simple satisfying breakfast or snack? If you like berries, then this may be a great breakfast to start your day! This is always so yummy, I feel like I’m cheating! It’s like dessert, but it’s not…note to self- make this recipe into popsicles (future recipe to follow).

Talk about a perfect mix of flavors! I love this beet, goat cheese, and walnut salad. This salad hits all the bells and whistles; it’s earthy, a little sweet from the beets, tangy, has crunch from the walnuts, has some creaminess from the goat cheese, and just has a unique flavor-not your typical salad! Plus, there are so many healthy benefits from eating beets!
Confession time- I used to hate beets! Until one day, I went to a restaurant to meet up with some friends. My friends were munching on a salad just like this recipe. I wanted to give it a try. Yup, explosion in my mouth! Who knew beets were so delicious! I went back to the same restaurant a few weeks ago and found out they do not serve that salad anymore. Bummer. So I did some searching a found this recipe. It could not be easier! And thank goodness, now I can have the salad whenever I want! And now you can have it whenever you want!

Be nice to your butcher and your butcher will be nice to you! Seriously, make friends with your butcher! That’s my lesson for you today. Here’s just one of the many reasons why…This recipe requires 1 pound of ground chicken. But ground chicken was $4.99/lb. However, boneless, skinless chicken breasts were on sale for $1.77/lb. I bought 10 lbs. of chicken breast and kindly asked my butcher to “course grind” the breasts for me. Now I have 10 pounds of healthy, ground chicken breast meat! When I got home, I divided the meat up into 1 lb. portions and put it into quart-size freezer bags, then stuck them in my freezer. Now, whenever I need, I just pull the amount I want out of the freezer, defrost it, and make a meal out of it! I know, I know….you’re welcome!
Now, onto this recipe… If you’ve ever gone to P.F. Chang’s, I’m sure you’ve had their famous lettuce wraps! It’s good as an appetizer, but hearty and filling enough for a meal (which is what we did). I love salad! Salads are fun to eat, versatile, and I don’t have to feel guilty about eating them! Smoked Jalapeno Popper, Bacon-Wrapped Meatloaf!!! OH YES I DID! I took a classic and kicked it up like a million notches. I usually cook all day on Sundays. But on this day, I didn’t want to go my usual route; I knew I wanted to use my smoker, but I wanted something different, something I have never done before. So I came up with this recipe. Meatloaf! I will wrap it in bacon. But what can I stuff it with? I know… I’ll stuff it with jalapeño poppers! (You should’ve heard the conversation I was having with myself; hilarious). If you do not have a smoker, then you can absolutely make this in the oven as an alternative. And remember, this ain’t yo mamas meatloaf, but it’s darn good!

So this is an easy way to kill two birds with one stone! Make a Crockpot full of chicken and use it for two dinners, maybe even three. One Crockpot of chicken will make my modified version of Rachael Ray’s Chicken Enchilada Suiza Casserole and my Chicken Tortilla Soup. And if you want to throw an extra chicken thigh or two into the slow-cooker, you’ll have enough for a third dinner…maybe tacos or panini’s. Just add the chicken to the Crockpot before you leave for work. When you come home, your chicken will be done and you can make two or three healthy meals! You’re welcome!
