Warm Chicken Parmesan Salad

Just got home from a wonderful trip to Ireland and London with an amazing group of friends, and settling back into the daily routine. Though it’s hard to come back to reality, I am looking forward to jumping back on the healthy eating and exercise train. We ate (and drank) like Kings over there and luckily I maintained my weight, only because we walked about 8 miles a day haha. That won’t happen everyday at home, so I need to definitely get back into whippin’ up healthy recipes. Here’s a deliciously simple and light recipe I came across while watching Giada at Home! I tweaked it a bit to lighten even more.

Caprese Panini

My hubby has the week off and we’re heading to the beach. I over pack food and drinks. But I’d rather have too much than not enough! My kiddos requested the good ‘ol peanut butter and jelly sandwich, but I wanted a different kind of sandwich to enjoy, so I’m making a panini-a caprese panini….tomato, mozzarella, and basil.  If you don’t feel like PB & J, then make this!  Enjoy!

Cheese Ball Stuffed Bell Peppers

Yes, it’s exactly what it sounds like….there are mini cheese balls stuffed inside these stuffed bell peppers! I know, I know, it’s a good one! Even my son said “Mom, you can’t say this recipe is ‘kid-friendly’, you should say it’s ‘kid-addicting’”. That’s how you know you made a great meal! Even if you already have your own favorite stuffed bell pepper recipe, make my mini cheese balls to stuff inside yours! You will thank me for it! Enjoy!

Garlic Cheese Bombs

My weakness=CHEESE. I found this insanely flavorful and super easy recipe on www.damndelicious.net and am in love. It’s also very flexible…you can pretty much stuff anything in crescent roll dough and wow your family and friends. I added fresh basil to mine and paired them with marinara sauce for the perfect bite!

Simple Tomato Mozzarella Chicken

It’s too hot to cook on the stove top or turn the oven on for long periods of time. So I’ve been using my BBQ as an outdoor oven these days. This yummy recipe is so simple and only has 4 ingredients!  My kiddos love it and it’s safe to eat for my hubby who has kidney disease. My daddy also came over for dinner last night, so I knew I had to make it diabetes-friendly too!
